No one I know removes the rotors just to have a tire mounted. None of the dozens of folks at the track ever do that. So unless you are really worried about the skills of your tire changing person, I would not bother. If I were that worried, I would find someone else to change the tire.
You do want to remove the spacers, and the sprocket if it is the rear wheel. Those pieces can get lost, and are not used when balancing.
You can use an A-frame ladder and a heavy duty ratchet strap to elevate the front tire for removal. Use a rear stand first, of course.
You will need to remove the calipers, but not the front fender. Loosen the axle pinch bolts on the throttle side first, then undo the axle nut. After that, you can loosen the pinch bolts on the othe side and slide the axle out.
For replacement, put in the axle, tighten the clutch side pinch bolts, tighten the axle nut, then the thottle side pinch bolts. Make sure to torque the caliper mounting bolts and axle bolt.
