Cruising problem

Firstly, bike is '95 893, rescued from ebay with no known history. After a couple of months of fettling the obvious, we know have an mot and it's on the road.

when cruising at any speed it feels as though the motor is unsettled and seems to struggle to hold it's revs, not dying off as such just more "wavering". It's as if the mixture is weakening off. Very apparent tonight on the dual carraigeway holding an indicated 110 and it seemed to die off to the point where it almost cut out. It had a bit bit of a cough then carried on as normal.
Acceleration is as strong as an ox, pulling happily all the way from 3-4k it just gets unsettled when cruising. Carbs do need a balance as tickover isn't spot on but this shouldn't affect it so bad should it?
New Iridium plugs fitted 150 miles ago but ignition timing not checked.

The carbs are currently removed and on the bench, partially stripped with nothing to report. Main jets are 120 which I think are standard, but are the needles adjustable?
Slide diaphragms are all good but I'd like to check float heights if anyone knows a setting or proceedure.

The only thing I did spot was the intake carb rubbers are a little on the hard side and the clamps weren't as tight as I would expect.

There is a tube/hose that runs along the the top of the carbs, it's connected to the carbs in a couple of places and then just hangs down to the right hand side of the carbs. Is that correct or where should it go?

There's also a couple of pipe connections on the underside of the tank which are not in use - any clues to what these are for?
