For water to get into the oil, the culprit is almost always the head gasket. I am surprised that they didn't see any water in there when they changed the oil.
Don't ride the bike anymore. You can damage it to the point of a needing a new motor. I don't think they would have taken the head off of the motor for any reason, and this is just a coincidence that the gasket is leaking now. I would definately have the bike checked out. If the head gasket is bad, have the head and block checked for warpage. If either is out of tolerance, a new gasket will do no good.
